Mississippi Pot Roast

by Ellen Cawood

Baseball season is here! I personally love this time of year, but it can be difficult to get a meal prepared with 2-3 games in a week. I know there are many of you with little ones who are out at the field all week long, and you just ant to come home to a good meal that is not out of a paper bag. This week’s recipe is for you.

Mississippi Pot Roast

Ingredients: 1 chuck roast, 1 large yellow onion, 1 cup of beef broth, 1 stick of butter, 1 pack of ranch seasoning, salt and pepper.

Instructions: Slice yellow onion and place at the bottom of the crock pot. Place chuck roast on top of the onions. Cut the stick of butter into quarters and place on top of the chuck roast. Sprinkle the ranch pack on top of the meat and pour the broth evenly over top. Add a pinch of salt and pepper over top. Cook on low for 8 hours. It will be so tender it will just fall apart. Serve with mashed potatoes, steamed carrots, and broccoli. Enjoy!
